Pulled Beef

Delicious!

  • Begin with a chuck roast
  • Trim any excess fat (won’t be much)
  • Coat with Worcestershire or yellow mustard
  • Season w/ salt, pepper, and garlic (or fav rub)
  • Place on smoker at 275 for three hours
  • Check hourly and spritz as needed
  • Once bark develops wrap in foil with beef broth
  • Cook until internal temp reaches 203 degrees or until it is probe tender like melted butter
  • Pull from smoker and loosen foil to vent
  • Rest for 30 minutes or until internal temp is 160
  • Pull to desired texture.

Spatchcocked Smoked Turkey

Delicious!

  • Note: For a large group it’s better to use two 12 lb. birds than one large one. They cook faster and tend to say moist longer.
  • Be sure to allow plenty of time for turkey to thaw
  • Place bird breast side down and use shears to cut out backbone
  • Flip bird over and press to break breast bone so it lays flat
  • You may choose to inject or just leave it as is
  • You can also loosen the skin gently with your hand and rub seasoning or herbed butter under it.

Smoked Bologna

Delicious!

Recipe:

  • One 5LB Chub of bologna.  
  • Unwrap and score bologna with crosshatch pattern about ½ inch deep
  • Coat all sides with light coat of mustard to make seasoning stick
  • Apply your favorite rub or seasoning
  • Place in 250 deg smoker or oven for 2 hours
  • Apply bbq sauce and continue smoking for an additional 45 minutes
  • Serve on sandwiches or with cheese and crackers

One Hour Brisket Chili

Delicious!

Recipe:

  • 2 pounds brisket (or other protein)
  • 2 cans chili beans / 2 cans kidney beans / 2 cans black beans
  • 1 29 Oz Can Diced Tomatoes
  • 1 6 Oz Can Tomato Paste 1 Tube Chorizo (optional)
  • 1 Cup Barbecue Sauce
  • 1 Med Onion Diced
  • 1 Tbsp liquid smoke
  • Directions: Add 2 tbs oil to pot on med low and sauté onions until soft (about 5 min)
  • Add Chorizo and sauté another five minutes or until safe
  • Add brisket and sauté another five minutes
  • Add 2 cups water, barbecue sauce, liquid smoke, tomatoes / beans / and tomato paste
  • Simmer for 45 minutes or until desired thickness

Optional (put on smoker for 30 to 60 minutes stirring every 15 min until desired smoke flavor is reached

Boo!

  • Start with your favorite meatloaf recipe
  • Shape into feet
  • Use slices of onion for toenails and bones
  • Drizzle with ketchup or BBQ sauce for simulated blood
  • Place in smoker or oven at 350 deg for approx. 1 hour or until meat reaches 165 internal temp.

White Turkey Chili

Delicious!

  • 1 Tbsp Olive Oil
  • 1 Med Onion, diced (about 1 ½ Cups)
  • 2 Stalks Celery, diced (about ½ Cup)
  • 3 Medium Poblano peppers (about 4 oz each), seeded with ribs removed finely diced (about 1 ½ cups)
  • 1 clove Garlic minced
  • 1 Tsp ground Cumin
  • ½ Tsp ground Coriander
  • ¼ Tsp Cayenne Pepper, more to taste
  • 1 Lb ground Turkey (may substitute chicken)
  • 2 (15.5 oz) cans white beans such as Cannellini, drained and rinsed
  • 4 Cups Low Sodium Chicken Stock
  • ¾ Tsp dried Oregano
  • 1 (15.5 oz) can Hominy, drained and rinsed

Instructions:

Heat the oil in large pot or Dutch oven over moderate heat.

Mini Potato Bombs

Delicious!

  • Start with 12 – 15 small golf ball size potatoes
  • Boil for 10 minutes and place in cold water
  • Use an apple corer to hollow out the center
  • Remove the plugs and set aside
  • Place in mixing bowl and coat with olive oil
  • Lightly season with your favorite rub and mix
  • Stuff potatoes with pieces of string cheese
  • Wrap with ½ piece regular thickness bacon
  • Season bacon and put in 350 deg smoker
  • Grill until bacon is to desired crispness

Smoked Candied Nuts

Delicious!

  • 2 Lb jar of unsalted nuts ~ I use assorted
  • Place in large bowl and coat with:
  • 3 Tbs maple syrup
  • 2 Tbs your favorite hot sauce
  • 2 Tbs molasses
  • 2 Tbs of your favorite rub or shake
  • Bake in 200 deg smoker or oven for 45 min
  • Pour on baking sheet with wax paper
  • Allow to cool before returning to jar

Spam Burnt Ends

Delicious!

  • Remove Spam from can & cut into 1-inch cubes
  • Place in disposable pan and coat with rub
  • Mix until all sides are coated well.
  • Place in 250-degree smoker or oven
  • Smoke for 1 – 2 hrs or until dark caramel color
  • Remove and top with ½ stick unsalted butter, generous sprinkle of brown sugar, and drizzle of honey.

Wood Fired Spaghetti Squash

with Sauteed Garlic Shrimp!

Delicious!

  • Rinse squash and cut in half
  • Scoop out the insides as you would a pumpkin
  • Place inverted on a cookie sheet with ¼ inch of water
  • Place in 350 degree smoker or oven for 45 minutes
  • Allow to cool for 10 minutes and scrape out meat with a fork which will result in noodle like strings
  • Sautee about 12 peeled and deveined with butter and garlic until done
  • Stir in Spaghetti Squash “noodles” until warm
  • Plate and enjoy!

Braided Pork Tenderloin!

Delicious!

  • Rinse meat and lay out on cutting board
  • Make two slices the length of the meat separating it into three equal strips but keep it connected at one end
  • Season the three strips on all sides
  • Braid the strips over each other
  • Place in 250-degree smoker or oven and cook until internal temp is 125 degrees
  • Apply BBQ sauce or glaze and continue cooking until internal temp is 140 degrees
  • Pull and rest for 5 minutes before serving
