Smoked Candied Nuts

Delicious!

  • 2 Lb jar of unsalted nuts ~ I use assorted
  • Place in large bowl and coat with:
  • 3 Tbs maple syrup
  • 2 Tbs your favorite hot sauce
  • 2 Tbs molasses
  • 2 Tbs of your favorite rub or shake
  • Bake in 200 deg smoker or oven for 45 min
  • Pour on baking sheet with wax paper
  • Allow to cool before returning to jar

Spam Burnt Ends

Delicious!

  • Remove Spam from can & cut into 1-inch cubes
  • Place in disposable pan and coat with rub
  • Mix until all sides are coated well.
  • Place in 250-degree smoker or oven
  • Smoke for 1 – 2 hrs or until dark caramel color
  • Remove and top with ½ stick unsalted butter, generous sprinkle of brown sugar, and drizzle of honey.

Wood Fired Spaghetti Squash

with Sauteed Garlic Shrimp!

Delicious!

  • Rinse squash and cut in half
  • Scoop out the insides as you would a pumpkin
  • Place inverted on a cookie sheet with ¼ inch of water
  • Place in 350 degree smoker or oven for 45 minutes
  • Allow to cool for 10 minutes and scrape out meat with a fork which will result in noodle like strings
  • Sautee about 12 peeled and deveined with butter and garlic until done
  • Stir in Spaghetti Squash “noodles” until warm
  • Plate and enjoy!

Braided Pork Tenderloin!

Delicious!

  • Rinse meat and lay out on cutting board
  • Make two slices the length of the meat separating it into three equal strips but keep it connected at one end
  • Season the three strips on all sides
  • Braid the strips over each other
  • Place in 250-degree smoker or oven and cook until internal temp is 125 degrees
  • Apply BBQ sauce or glaze and continue cooking until internal temp is 140 degrees
  • Pull and rest for 5 minutes before serving

Delicious!

  • Unwrap A Block of Cream Cheese
  • Make shallow crosshatches on top of block
  • Add your favorite BBQ rub on edges & sides
  • (Optional add more cheese last 15 minutes)
  • Smoke at 250 degrees for 1 ½ to 2 hours
  • Serve with your favorite crackers!

Bacon-Wrapped Onion Bombs

Ingredients

  • 1-2 tbsp of your favorite Pork BBQ rub
  • 8 strips bacon
  • 1 lb. ground beef (I used 80/20)
  • 2/3 cup chopped mushrooms
  • 1 jalapeno chopped
  • 4 large onions, preferably Vidalia
  • ½ cup of your favorite BBQ sauce
  • Optional, hot sauce to taste – I used Marshall’s Haute Sauce Uncle Nearest Whiskey Smoked Ghost Hot Sauce
  • 2/3 cup shredded mild cheddar cheese

Recipe Instructions

  1. Mix ground beef, mushrooms, jalapeno and approximately 1-1.5 tbsp bbq rub together in a bowl.

BBQ Moink Balls

Meatballs for the Moo and Bacon for the Oink!

  • Make you favorite meatballs or use frozen.
  • Wrap in bacon and secure with a toothpick. (Caution be sure to remove toothpicks before serving)  
  • You may want to par cook the bacon to if you like it crispy.
  • Set smoker or oven to 350 degrees and cook to 155 degrees internal temp.

Stuffed Beer Can Burgers

Delicious!!

  • Separate 1 lb. Gr Beef into three equal balls
  • Place on parchment paper
  • Gently press can into ball and spread meat up around sides leaving bottom and sides the same thickness.
  • This will create a cavity for your stuffing
  • Season “meat bowl” with your favorite rub
  • Wrap with thin sliced bacon (optional)
  • Place a slice of your favorite cheese in bottom
  • Spoon in Mac n Cheese or filling of your choice
  • Add more sliced cheese over top of M&C
  • Cook in 375 deg smoker or oven for 45 min or until they have a safe 165 deg internal temp.

Smoked BBQ Chicken Wings

Delicious!!

  • Separate wing tips and drummies if desired
  • Place in fridge for 2 hours uncovered to dry skin
  • Mix ¼ cup corn starch with 2 Tbs BBQ Rub
  • Coat wings lightly with seasoned corn starch
  • Season with your favorite BBQ Rub
  • Season and let stand for 30 min while grill heats
  • Cook at 375 in smoker for 45 min to 1 hour
  • Until they reach a safe 150 degrees
  • Apply glaze and let them go till they hit 165

(if you choose not to glaze be sure to take wings to 165 degrees internal temp)

Smoked BBQ Baked Beans

Delicious!!

  • 1 Large 117oz can baked beans
  • 1/2 Sleeve beef chorizo (more if desired)
  • 1 Medium Onion Finely Diced
  • 1 Cup BBQ Sauce
  • ½ to 1 Lb Bacon cooked and crumbled
  • 2 Tablespoons Favorite BBQ Rub

Directions:

  • In a large pot add 2 – 3 Tbs Olive Oil
  • Sauté Onions until translucent
  • Add ½ Sleeve Chorizo and cook until done
  • Add Large Can Baked Beans and Stir
  • Add Crumbled Bacon
  • Add 1 Cup favorite BBQ Sauce
  • Add 2 Tbs Favorite Rub
  • Place in disposable pan
  • Put in 250-degree smoker for one hour stirring every 15 minutes.

Cast Iron Skillet Apple Cobbler

Magically Delicious!

  • 7 or 8 Granny Smith Apples
  • Core, Slice, and Place in Large Bowl
  • Add One Cup White Sugar
  • Add One Tbs of Cinnamon
  • Mix With Hands Until Coated
  • Let Stand 50 Minutes Mixing Occasionally

Topping:

  • 2 Cups All Purpose Flour
  • 1 ½ Cup White Sugar
  • ½ Cup Brown Sugar
  • 2 Tsp Baking Powder
  • 1 Pinch Salt
  • Whisk Together
  • Add 2 Beaten Eggs and Mix
  • Grease 12” Cast Iron Skillet
  • Add Apples and Juice to Skillet
  • Sprinkle Topping Over Apples
  • Pour One Cup Melted Butter Evenly Over Top
